Lecture: Umami In Japanese Cuisine

The Japanese word “umami” can be translated as “savoriness”. In her talk, Vice Consul Maiko OKUNO from the Consulate General of Japan in Frankfurt am Main explains the significance of the fifth taste in Japanese cuisine. Afterwards, Takuya OKAMOTO, the consulate’s residence chef, demonstrates the culinary role of umami, using a variety of Japanese dishes – tasting included!
